Kitchen and Service

Pictured above is our chef and boss of the kitchen, Francisco. As with almost all of our Agua Boa Amazon Lodge team, he resides in one of the local villages during the closed season at the Lodge. He has been head of the catering at the Lodge for some seven years now, and his culinary expertise produces a wide range of soups, fish, and meat dishes both in local and international styles.

His local cuisine, homemade biscuits, and bread are always a hit with the guests. Francisco has an assistant in the kitchen, and Mari from our service team can often been seen showing her culinary skills in the kitchen.

Mari and Jon have been with the team for 2 years, both are from Boa Vista and make up our service team attending to our guests during meal times. They will also be found serving freshly made Caipirinhas to returning guests after a long day on the river, and serving our guests at the pool side bar whilst they are relaxing prior to their evening meal.
